Try to avoid hot chocolate or cocoa mixes that contain milk chocolate or powdered dairy ingredients. Wrap and refrigerate overnight or up to 2 days.īefore serving, cut the marshmallows on the diagonal, and arrange them, cut-side down, in a neat line all over the top edge of the cheesecake. Run a knife around the edge, and let the cheesecake cool to room temperature. Transfer the springform pan to a cooling rack. Close the door, and let the cheesecake sit in the oven until cooked completely through, 1 hour more. Turn the oven off, and open the door for a few seconds to let out some heat. Fill the roasting pan with enough hot water to go halfway up the side of the springform pan (but not above the foil).īake the cheesecake until the edge is set but the center jiggles slightly (when you gently shake the pan, the cheesecake should move in a cohesive wave motion), 1 hour 10 minutes to 1 hour 20 minutes. Mix the crumbs and butter and press into the bottom of a greased 8-9 inch spring form pan. Pour the filling into the crust, and set the pan inside a roasting pan. Melt the chocolate into the cream and set aside. Add the eggs and vanilla, and pulse until incorporated. Pulse the cream cheese, sugar, hot chocolate mix and sour cream until completely smooth, without any lumps, scraping down the side of the bowl a few times. (This helps seal the pan, to keep water out while baking.)įor the filling: Wipe out the food processor. Place the pan on a large piece of foil, and fold the foil up the sides of the pan. Bake until the crust is just firm, about 10 minutes. Pour the mixture into the prepared pan, and press it into the bottom to make an even layer. Add the butter, hot chocolate mix and salt, and pulse until the mixture comes together and holds its shape when squeezed. Pulse the graham crackers in a food processor until finely ground. Butter the inside of a 9-inch springform pan. Garnish with lots of whipped cream, crushed peppermint candies, and mini candy canes.For the crust: Position a rack in the center of the oven, and preheat to 325 degrees F. Stir in the chocolate liqueur, peppermint schnapps (if using), sugar, and peppermint extract and cook over medium-heat until super thick and smooth.Add in the chopped chocolate and whisk until the chocolate is completely melted.Bring the milk, heavy cream, and salt to a boil.Chocolate Shavings: Or a little unsweetened cocoa powder, for dusting! Optional!.Mini Candy Canes: These look so cute as a garnish, but are totally optional! Crushed canes or peppermint candies also make a great garnish.Feel free to use homemade or storebosugh! Whipped Cream: In my opinion, hot chocolate isn’t completely without a giant swirl of whipped cream.Peppermint Extract: May be omitted you don’t like the combination of chocolate and peppermint.Salt: Enhances the chocolate flavor and balances the sweetness.Dark Chocolate: I suggest using a high-quality dark chocolate bar and not chocolate chips! White chocolate and milk chocolate should not be used.Confectioners’ Sugar: Just a touch sweetens and thickens the cocoa.Peppermint Schnapps: Adds a great peppermint flavor and boozy kick, but again, may be omitted.Chocolate Liqueur: Adds a great chocolate flavor and a boozy kick.But feel free to experiment with dairy free “milks” if you’re feeling adventurous… just know it won’t be the same recipe I have here. Add the Philadelphia Cream Cheese, mixing on medium-low speed until combined. Milk: For the thickest cocoa, I suggest using whole milk aka full-fat. Place the sugar, cocoa, and salt in a large mixing bowl, and whisk to combine.It reminds me of a peppermint mocha latte… but a million times better! I’ve made many versions over the years… but this ultra thick and creamy peppermint hot chocolate might just be my favorite. It’s Christmas Eve! And in our house, it’s not Christmas Eve without a big mug of hot cocoa. If you’re not a fan of peppermint flavor, simply omit the peppermint extract and schnapps. If you’re not drinking peppermint hot chocolate this holiday season, you’re missing out! Top with whipped cream and crushed candy canes for a stunning presentation sure to please.
